Healthy and Tasty Family Dinners for under $20.00

I've been busy lately on several cooking and educational fronts. One of the most fun and educational experiences I've had recently happened working with the folks at Get Cooking, an NPO focused on delivering nutritious and delicious food to local families working under a budget.

Founder is Stacie Archer and old friend chef Norman Van Aken is the culinary director...check them out a www.getcooking.org where we got to do something that came pretty natural as a cooking Dad and Grandad...making a dinner for 4 or more using what we find in our refrigerator and pantry. Stacie calls it 'The Great Replate Challenge'. In our house we call it 'Refrigerator Magic'.

I got to do a video showing how we took a little white Florida Shrimp, Spanish Olive oil, a red pepper, an onion, granulated garlic, smoked paprika, capers, peas and par boiled rice into an ersatz paella style rice dish....all done under 45 minutes and under $20.00 to feed a family. My dinner actually cost less than $15.00. The project was done on my IPhone with the help of my IT gurus, daughet Jillian and son in law Mikal. They were paid in Paella after the filming...

It's really satisfying to see people be able to learn about tasty more nutritious food and not waste things they already have on hand and turn it into a really fine meal...and under budget !

If you go to their website or to their Facebook page you'll see some of Central Florida's best chefs leaning in to show local families a lot of great ways to make restaurant grade dishes to prepare and serve...and in turn have their families share with others.
